Japanese Style Chef Knife – Mammoth Tusk | 52100 Steel
This Japanese-inspired chef knife was built as a precise, high-performance slicer with a clean, refined feel in hand. At 12 inches overall with a 6 1/4 inch cutting edge, it offers a slightly longer profile that moves effortlessly through prep work while maintaining control and balance.
The blade is crafted from 52100 high carbon steel and heat treated to 62 HRC, including a cryogenic treatment for added wear resistance and durability. The blade shape lends itself especially well to slicing, with a thin grind that glides through food with ease.
The handle is a Wa-style design made from stabilized Bolivian Coffeewood and features a striking segment of red stabilized mammoth tusk from the ice age. G10 and brass accents tie the materials together, creating a handle that is both comfortable in use and visually distinct.
This knife comes paired with a custom-fit Coffeewood saya. A hidden magnet inside the sheath helps keep the blade securely in place while protecting it during storage.
This knife also includes a bottle of TEMPER, our hand-bottled camellia oil for blade care and protection. As with all high carbon steel knives, the blade will naturally develop a patina over time and should be dried promptly after use.
