Petty Knife – 52100 Carbon Steel & Lacewood Saya
Petty Knife – 52100 Carbon Steel & Lacewood Saya
This Japanese-style petty knife is one of the most versatile tools in the kitchen, ideal for precise slicing, trimming, and everyday prep. Built for performance and durability, the knife measures 11 inches overall with a 6-inch blade, making it an excellent size for both detail work and general kitchen tasks.
The blade is forged from 52100 high-carbon steel, a steel originally developed for ball bearings and well known for its exceptional toughness and edge retention. Professionally heat treated to 62 HRC on the Rockwell scale, the blade also undergoes cryogenic treatment to further enhance wear resistance and long-term durability.
For additional protection, the blade has been finished with Gator Skin, a nano-ceramic coating that helps guard against corrosion while maintaining the performance of the steel.
The tapered octagonal handle is crafted from beautifully figured lacewood, accented with micarta and G10 spacers for strength and visual contrast. The handle shape provides a secure, comfortable grip and balanced feel in hand.
This knife includes a custom-fit lacewood saya, handcrafted to match the handle. The saya offers both protection and presentation, making it ideal for safe storage, travel, or keeping the edge protected between uses.
This knife also includes a bottle of Temper, our in-house protective oil designed to help maintain and protect high-carbon steel blades. As with all high-carbon steel knives, the blade will naturally develop a patina over time and should be dried promptly after use.
Each knife is handmade by David D. Carey and ships fully insured to ensure it arrives safely and ready for years of dependable use.
