6¼" Chef Knife – 52100 High Carbon Steel, Wa Handle
This one’s a beautiful balance of function and craftsmanship. The 6¼" blade is made from 52100 high carbon steel ( ball bearing steel) and heat treated to 62 Rockwell for edge retention and strength. The hand-rubbed satin finish gives it that clean, classic look.
The Japanese Wa-style handle is crafted from stabilized black walnut, maple, and African Blackwood, and accented with brass so it’s smooth in the hand and solid in the grip. The spine and choil have been gently rounded for comfort during extended use.
As with all high-carbon steel knives, the blade will naturally develop a patina over time and should be thoroughly dried after each use to prevent rust.
