Inspired by the traditional Kiritsuke, this chef knife blends Japanese influence with a versatile double-bevel edge, making it equally capable of precise push and pull cuts or general kitchen prep. The blade is thin and finely tapered, with a long flat section toward the heel that promotes controlled slicing while maintaining everyday usability.
Ground from high-carbon 52100 steel and heat treated to a Rockwell hardness of 62, the blade offers exceptional sharpness and edge retention. The spine and choil are rounded and polished by hand for comfort while working.
The full-tang handle is crafted from stabilized walnut and accented with turquoise and ivory composite elements. The geometry is shaped for a comfortable, balanced grip while showcasing the natural figure of the wood.
Included with the knife is a custom walnut saya (wooden sheath) and a matching walnut stand — a display-forward design that keeps the knife secure when stored.
This knife represents several new techniques explored during the making process, the kind of build that’s hard to let go of. Each knife is handcrafted individually, making every piece truly one of a kind.
As with all high-carbon steel knives, the blade will naturally develop a patina with use. Hand wash and dry promptly after use to prevent rust and preserve the finish. Avoid dishwashers and prolonged moisture exposure.
