This Santoku-inspired chef’s knife is a versatile kitchen knife designed for everyday cooking and precision prep. With a blade just under 6 inches, it excels at slicing, chopping, and fine detail work, making it an ideal all-around knife for both home cooks and professionals.

The blade is hand ground from 52100 high carbon steel, also known as ball bearing steel, and heat treated to 62 HRC. This steel is renowned for its ability to take an exceptionally sharp edge and hold it through extended use. The flat ground profile offers excellent cutting performance and easy maintenance.

The knife features a full tang handle constructed from ivory composite Ultrex and stabilized walnut, accented with brass and red G10 spacers. The handle provides a secure, natural feel in hand while adding refined visual contrast to the blade.

A matching walnut saya is included. Crafted with embedded magnets, it holds the blade securely in place while protecting the edge during storage or transport.

As with all high carbon steel knives, the blade will naturally develop a patina over time. This patina is a normal and desirable characteristic that helps protect the steel and reflects the knife’s use and care. To maintain the blade’s finish and prevent rust, it is recommended to dry the knife promptly after use.
